What to do with those eggs


What are you going to do with all those hard boiled eggs?  We didn't color any but the rest of the family did.  Keeping the tradition going.  They want to share some of the bounty with us.


Here's my mid century egg plate, in the "Atomic" pattern.  Of course I will fill it with deviled eggs.

I also have a recipe for Indian Egg Curry.

This isn't my exact recipe but close enough.  You can find lots of egg curry recipes on the net.

When I make pickled beets I save the juice as we use the beets.  I put hard boiled eggs in the juice and after a day or so they come out beautifully purple with just a slight tang of pickle juice.

Any other suggestions?

  4. Great nostalgia, the Atomic pattern. It was everywhere back in the sputnik days, wasn't it. I love an egg platter with devilled eggs, and always like egg and lettuce sandwiches, a great Australian favourite. The beetroot eggs sounds an interesting way to go.

  5. I made deviled eggs for Easter guests and out of 13 eggs (26 deviled eggs) there were none left. So, I can't help any other way than that!

    I wish I had your egg plate. Mine is clear and not as pretty as yours.
